Smashed Loaded Mashed Potatoes


Every year for St. Patrick's Day, I make Guinness Stew {Recipe HERE}
 We just aren't fans of Corned Beef, but I am Irish, so I still want to make a fun meal each St. Patty's Day, so Guinness Stew it is for us!

I serve my Smashed + Loaded Mashed Potatoes with the Guinness Stew.
I made up this recipe on St. Patty's Day several years ago & it is now a staple.
 Here is what you need:
- Bag of Red Potatoes
- Cream Cheese (I use 1/3 less fat)
- Bacon (I use Hormel Fully Cooked Bacon)
- 1 cup Sour Cream
- 1 Tablespoon Butter
- Green Onions
- 1 cup Cheddar Cheese
- 1 Tablespoon Lawry's 
- Pepper (to taste)

Here is what you do:
Cut your Red Potatoes into quarters
Boil them until they are cooked..about 15-20 minutes.
When they are tender,  drain them. 
Put them back in the pot and add a block of cream cheese (I soften the cream cheese in the microwave for about 30-40 seconds), 1 cup of sour cream, cheddar cheese, 1 TBSP butter, Lawry's & pepper to taste.
Stir it all together until the cream cheese is melted thru.
I like my Smashed Potatoes to have chunks of potato.
Dice up your green onions ( I use 2-3)
Chop up your bacon 
(I use 4-6 slices of the Hormel Fully Cooked Bacon. I just microwave it for 30-45 seconds, let it cool, then chop it up)
 Then add the diced green onions & chopped up bacon to the potato mixture.
 These are SOOOO good.
 They have a wonderful flavor & easy to make!
I named them Smashed + Loaded Mashed Potatoes a few years ago on St. Patty's Day. 
I love a play on words...Smashed + Loaded (like people get on St. Patty's Day ;)
But, mainly because these are Smashed (not Mashed) Potatoes and they are Loaded with yummy things....cream cheese, sour cream, butter & bacon!
They are the perfect compliment to Guinness Stew or really any meal you would make potatoes for!
