Empty Tomb Easter Cookies


Need a quick, easy and last minute Easter activity to do with your kids that is actually meaningful?
Here is a fun one that I read about a few years ago & couldn't wait to do it with Kate.
We made these last Sunday (on Palm Sunday) but it is really meant to be done the night before Easter Sunday.

Empty Tomb Easter Cookies
Here is what you need:
1 Cup of Pecans
1 Cup of Sugar
1 tsp. Vinegar
3 Egg Whites
Zipper Bag
Wooden spoon
Wax Paper
Pinch of Salt
Tape
Bible
Directions:
Preheat oven to 300 degrees.
Place pecans in zipper bag and beat them with the wooden spoon to break them into small pieces. Explain that after Jesus was arrested that He was beaten by the Roman Soldiers.
Read John 19: 1-3 and smell the vinegar.
Put 1 tsp. Vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross he was given vinegar to drink.
Kate asked me where all the pictures are in my Bible. haha!
Read John 19: 28-30. Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life.
Read John 10: 10-11. Sprinkle a little salt, taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus’ followers, and the bitterness of our own sin.
Read Luke 23: 27. Add 1 cup of sugar. Explain that the sweetest part of the story is the Jesus died because He loves us. He wants us to know and belong to Him.
Read Psalm 34: 8 and John 3: 16. Beat with a mixer on high speed for 12-15 minutes until stiff peaks are formed.
12-15 minutes is a long time for a 3 year old to wait...Kate had fun with the tape while we were waiting.
After the 12-15 minutes, your mixture should look like this:
Explain that the color white represents the purity in God’s eyes of those whose sins have been cleansed by Jesus.
Read Isaiah 1: 18 and John 3:1-3. Fold broken nuts into mixture.
Stir:
(Don't let your kid taste the mixture...raw eggs! Oops!)
Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus body laid.
Read Matthew 27: 57-60. Put cookie sheet in the oven:
Close the door and turn the oven off. Give each child a piece of tape and seal the oven door. Explain the Jesus’ tomb was sealed.
Read Matthew 27: 65-66. Go to Bed!! Explain that we may feel sad to leave the cookies in the oven overnight just as Jesus followers were in despair when the tomb was sealed.
Read John 16: 20 and 22.
On Easter morning, open the oven and give everyone a cookie.
Notice the cracked surface and take a bite. The cookies are hollow!!! On the first Easter, Jesus’ followers were amazed to find the tomb open and empty.
Read Matthew 28: 1-9. Christ has risen, hallelujah!
I think this is going to be a new Easter tradition for us!

White Chocolate Chip Valentine Sprinkle Cookies A Winner!


We love making treats & cookies around here...especially holiday themed ones!
My kids love sprinkles, so I try and incorporate them into our baking.
Sprinkles are such an easy way to make an ordinary treat/cookie more festive & fun!
As you may also know, I am self proclaimed a cookie snob.
To me, the perfect cookie is soft & only slightly crisp on the edges....this cookie is just like that!
I am so excited to share my White Chocolate Chip Valentine Sprinkle Cookies with you!
Here is what you need:
2 cups flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter (which is 1 1/2 sticks of butter), softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg 
2 teaspoons vanilla
2 teaspoon almond extract (this is optional. I LOVE almond extract, but if you don't like it, you can omit it)
1 bag of white chocolate chips (I use Ghiradelli brand, they
Valentine Sprinkles

Directions:
Beat the butter, brown sugar and white sugar and beat on medium speed for 1-2 minutes until light and fluffy.
Mix in your egg, vanilla extract & almond extract and beat until well combined.
In a separate bowl combine the flour, cornstarch, baking soda and salt.
Slowly add your dry ingredients to the wet ingredients on low speed until just mixed.
Fold in the bag white chocolate chips and a handful sprinkles

Cover your dough with plastic wrap and chill for at least 1 hour.
Take the cookie dough out of the fridge  & use a cookie scoop (THIS is the one I have) and roll into balls

Roll the dough in the sprinkles. I did half of the cookies with nonpareils sprinkles:
 And, the other half in the heart sprinkles:
Bake at 350 degrees for 8-9 minutes
Aren't they so festive? My kids love sprinkles...on everything & anything. Luke did all the sprinkle rolling for these cookies. He loves helping me bake cookies.
Let cool for 5 minutes before transferring to a wire rack.
 This recipe makes 2 dozen cookies.
After they are cooled, you can keep them in an air tight container or ziplock & they will stay nice and soft for several days!

Things I learned selling Girl Scout Cookies


As much as we all love the online community (even me...or maybe especially me), sometimes it is important to put down the mouse and actually touch base with the people around you.

In 2012 I wrote a post on how Halloween, if done right, is actually a wonderful community building opportunity. And this year was no less spectacular. Our weather here this past Halloween was AMAZING and my neighbors were out in force; having front-yard gatherings and hanging out on their front porch to chat with trick-or-treaters. It took us forever to get around the neighborhood because we stopped to chat with everyone as we went around.

Enter Girl Scout cookies sales.

I am going to have to add door to door Girl Scout cookie sales to my list of awesome community building activities. (Although I wonder if we would have had such a great experience trying to sell a product that was a little less universally loved).

Through pounding the pavement with my six year old Daisy Scout, I met a whole slew of new neighbors (one's that don't typically have their doors open at Halloween). We met lots of lovely people along the way, but the following four stood out:

1. I finally learned the name of the neighbor on the corner at the bottom of our street. We have lived here for almost 6 years and that was the one house where we had never seen or met the occupants. As it turns out, they have lived there for decades and know our across the street neighbors well (from when their kids grew up together). I had always wondered who lived in that house and now, not only do I know their names, but will be able to interact with them if I ever see them.

2. My girls and I discovered that living less than a block away is a lovely homeschooling family with kids their same age. Not only that, but as it turns out, we belong to the same online community group (online is great, but in person is AWESOME). And here they have been living around the corner from us for years, but if we had never stepped out the door we might not have known. So, we exchanged information and talked about going to the neighborhood park together sometime.

3. I found out that a house a few blocks down is home to a lovely lady, whose husband happens to put in hardwood flooring. As it happens, we have been looking to put hardwood flooring in our house (AFTER my last child potty trains, of course.) Now I have the opportunity to support someone in my own local community, which is one of my favorite things to do.

4. As we were wrapping up sales for the night, I stopped at a house across the street from ours.  I was invited to come in and sit down while our kids played since it had been a while since we had seen each other. We then had the opportunity to have a really deep heart to heart about some things that were challenging her.

Lastly, selling to my friends and family forced us to take the time to deliver the cookies and stop and visit for awhile. In the last week we have sat down with friends we haven't seen in months, family we rarely take the time to visit and neighbors who typically only get the acknowledgement wave when we are leaving or returning to the house.

The 21st century finds us so insulated and isolated on our own busy islands, that we forget that there are families right next door. Families who appearances might suggest are picture perfect, may not be if you take the time to listen. Everyone needs support, and it is easy to miss those who project certain images. It is important to put the computer down from time to time and really listen to real people.

Whether it is selling cookies, or just making the excuse to make the rounds, we all need to remember that face to face interactions can never be replaced with online communities. They both have their time and place. Online is easier because we can do it on our time, in our environment, under our control, but in order to build a strong, interconnected community, we need to nurture the face to face as well.

Sure we sold enough boxes that we may actually meet my daughter's sales goal, but more importantly, I feel like I plugged in to the people in my community in a very real way. That, to me, is worth more than any money in the world.....well, maybe not worth Thin Mints dipped in coffee, but what can I say? I am an addict.

Sprinkle Sugar Cookies 100 Amazon Gift Card Giveaway


Today, Luke turns 4 years old (cue tears!!!!)
In honor of his birthday, I thought I would share Luke's favorite cookie recipe.
Luke asks me several times a week to make Sprinkle cookies.
 When I look back on Summer 2016, I will think of Luke & these Sprinkle cookies.
This is the summer he really got into helping me bake...and these Sprinkle Cookies are currently his favorite thing to bake (and eat!)

Here is what you need:

3/4 cup butter, at room temperature ( 1 1/2 sticks of butter)
1 cup  sugar
1 egg, plus 1 yolk
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
1 (3.4 ounce packet instant vanilla pudding mix)
2 cups flour
1/4 cup sprinkles, plus additional sprinkles for rolling


Directions:
Mix the softened butter and sugar on medium speed for 2 minutes. 
***Tip: I keep 1-2 vanilla beans in my sugar container. It makes the sugar have a nice vanilla flavor. I have been doing this for almost 10 years. I replace the vanilla beans every year or so.***
Add in the egg, vanilla, baking soda and salt. Mix until combined.
Add the dry pudding mix:
Mix on low for about 1 minute:
Add in the 2 cups of flour and mix for 2-3 minutes on low until combined.
Now, it's SPRINKLE TIME!
Mix in 1/4 cup sprinkles:
We love the non-perils Sprinkles, but you can use any type of sprinkle you want.
Chill the dough in the fridge for 1 hour.
After your dough has been chilled, use a cookie scoop to make balls of dough:
THIS is the cookie scoop I use.

Luke really likes sprinkles, so after I scoop the cookies into balls, I roll them in MORE sprinkles!
You can never have too many Sprinkles...or can you? ;)

Bake at 350 for 10-11 minutes:
These cookies are SO soft & delicious!
All the sprinkles on these cookies just make me happy :)

This recipe makes 2 dozen cookies.  We rolled the first dozen in Sprinkles, but I didn't do that for the 2nd dozen, because I wanted to see how they would turn out. They were still amazing. Kate liked this version better.
I thought they were both delicious :)
I can't wait to make these Sprinkle Sugar Cookies this December with Christmas Sprinkles!
